My dear friend Michelle introduced me to Love Beets last summer. One of our favorite activities is getting together for a casual potluck at Compo Beach and she made a salad filled with vegetables including tasty beets. I love beets but I’m wary of ones from a can – they can be mushy or tasteless – and roasting beets can be time consuming. Love Beets make flavorful beets with great texture available for a quick weeknight salad.
Love Beets are sold in the vegetable section of Whole Foods and other markets. The plain ones are vacuum packed so they last for several weeks in the fridge. They also make infused baby beets which are a great addition to salads although their shelf life is shorter than the vacuum packed ones. I keep a package of Love Beets in the fridge so I have ingredients on hand for a quick salad.

-slice plain ones and serve on crostini spread with goat cheese
-combine thickly slices beets with mixed greens, dried cranberries, walnuts, olive oil and balsamic
-top arugula with quarters of beets
