Summer Cocktail: Cherry Caipirissima

As you may recall, I think mojitos are the perfect summer cocktail.  Well, I might have a new favorite.  Swap mint for cherries and you have a cherry caipirissima.  I absolutely love summer fruits – cherries, berries, peaches, plums, nectarines, apricots, watermelon…you get the picture – and I jump at any opportunity to enjoy the seasonal bounty.  One of my favorite summer fruits in a delicious and refreshing cocktail?  Yes, please!

A beautiful reddish pink hue from the muddled cherries and slightly tangy from lime juice, this drink is a winner in the taste and looks departments.  Serve up a pitcher up these on the Fourth of July!

Cherry Caipirissima

yields one drink

4 cherries, pitted
half a lime, cut into quarters
3/4 ounce simple syrup*
2 ounces white rum
club soda or sparkling water

Muddle the cherries and limes in the bottom of a shallow, heavy bottomed glass (delicate glasses are not ideal for muddling). Add simple syrup and several ice cubes; stir well. Then add rum and stir well. Put a few more ice cubes in the drink and give a final stir. Top off with club soda or sparkling water.

*to make simple syrup, combine one cup sugar and one cup water in a small saucepan. Bring to a boil and stir. Let simmer for a few minutes until the sugar is completely dissolved. Let cool. Stored in an airtight jar, simple syrup will keep in the refrigerator for up to a month.
