Basil Lemon Cooler

A few weeks ago we had friends staying with us for the weekend and contemplating going to a bar on the water to enjoy a drink in the afternoon. It was absolutely beautiful out and we were sitting around on the deck and we all thought, “why not stay here and make drinks instead?”

Plus, if we stayed at home we got to hang with these adorable guys.

Lindsay and I got to work thinking of a light and refreshing cocktail to make. We both spotted my basil plant at the same time and thought a cocktail with basil might be good. I had lemons and simple syrup in the fridge so we got to work making a cocktail. It turned out light, refreshing and not too boozy…perfect for a warm afternoon in the sun with good friends, pups and popcorn.

Basil Lemon Cooler
yields one cocktail

3-4 large basil leaves
1 tablespoon simple syrup
2 tablespoons freshly squeezed lemon juice
1 1/2 ounces vodka
sparkling water or club soda

Tear the basil leaves and put into a low glass. Gently bruise basil with a muddler or wooden spoon to release the oils and fragrance. Add simple syrup, lemon juice and vodka, stirring to combine. Add ice to glass and top off with sparking water. Give drink a stir to combine.

Note: this would also be great without the vodka, just increase the amount of water slightly and adjust simple syrup and lemon juice if needed.

    Wow, sounds so good. I wouldn’t have thought of putting basil and lemon together in a drink – but why not?
