Mom’s Coleslaw

My Mom has been making this coleslaw for as long as I can remember. Forget the mayonnaise-heavy and flavorless versions you get at a deli, this is packed with flavor and crunch. It’s just barely creamy and has a touch of sweetness.  I love the tanginess from the cider vinegar – it perfectly offsets the sweetness – and dried cranberries are a delicious and unique addition. This coleslaw always disappears very quickly around our house. It’s the quintessential summer side dish and a welcome addition to any barbecue or picnic.

Mom’s Coleslaw
serves 4-6 as a side dish

2 tablespoons plus 1 teaspoon sugar
1/4 cup plus 3 tablespoons mayonnaise, or a mixture of mayonnaise and plain yogurt
2 tablespoons plus 1 teaspoon cider vinegar
1/2 teaspoon salt plus more to taste
freshly ground black pepper
1 bag coleslaw mix, approximately 7 cups
1/2 cup small diced red onion
1/2 cup dried cranberries

In a medium bowl, whisk together sugar, mayonnaise, vinegar, salt and several grinds pepper until smooth. Add coleslaw mix and stir to coat with dressing. Stir in red onion and cranberries. Taste and add more salt and pepper if needed.

You can serve coleslaw immediately but it’s best to let it sit for an hour to let the flavors meld.

    Looks delicious! I love coleslaw, but prefer when they are not mayonnaise heavy as well. This looks great 🙂
